Springtime Lox Sandwich
I'm a 20-something law student who loves to eat good food. This shall be a chronicle of random thoughts. I don't expect anyone to read this, so if you found your way here randomly, I feel so so sorry for you.
Today, a recipe for my new favorite sandwich: springtime lox.
Springtime Lox Sandwich
For 1 serving:
2 slices of multigrain bread
2-3 slices of smoked salmon
9 thin slices of cucumber
Goat cheese
1 tablespoon of Grey Poupon mustard
1 tsp of honey
milk
1. Toast the bread.
2. Mix the Grey Poupon, honey, and a dollop of milk. Stir and add milk until a sauce-like consistency is reached.
3. Spread honey-mustard sauce on one slice of bread. Spread goat cheese on the other.
4. On the goat cheese, lay flat the cucumber. On the honey mustard, lay flat the smoked salmon.
5. Combine both sides of the sandwich. Eat.
Why should you make this?
#1. New Yorkers love cream cheese and lox on a bagel. This is a variation that's perfect for spring. It's lighter (bread as opposed to bagel), and the goat cheese adds a little kick to the salmon.
#2. Cucumbers are healthy, light, and perfect for spring. The salmon and goat cheese surprisingly do not overwhelm cucumber's delicate flavor.
#3. The first dish that I make with smoked salmon is garden rolls. This is a great way to repurpose the little bit of leftover cucumber and salmon.
Why should you not make this?
Smoked salmon is freakin' expensive in this city! This is why I wait until I go home to Mommy in Boston, and she takes me to Costco or BJ's, where I buy a pound of smoked salmon for $15. Yay!
